Chicken Rice with Pumpkin Marsh

The orange colour of pumpkin tells us that it is rich in beta-carotene, an important anti-oxidant that the body converts to vitamin A. It also contains vitamin C, potassium and calcium.

8 oz (1 cup) pumpkin, peeled and diced, with seeds removed 1. Peel and dice the pumpkin, steam, or simmer in a little water, until nice and tender
10-12gm chicken breast 2. Add the chicken stock and simmer for 10 mins
70-80gm porridge  3. Combine pumpkin, chicken & porridge then place the cream cheese on top, put in a oven and cook gently until the cream cheese has melted (around 3-4mins), stirring often and serve.
3-5 gm cheese
